Easiest best bread I've ever made!

The night before:
In a large bowl, place 3 cups flour*, 1 package of active yeast, 1 tsp salt - mix well.
Add 1 1/2 cups of lukewarm water.
Mix water in until there is a moist mass of dough.
Cover with plastic and leave overnight 8-12 hours.

Next morning:
Turn out dough and gather into a loaf shape on a floured surface.
Not much kneading needed.
Place loaf on parchment in a dutch oven and cover.
Put into a cold oven and turn heat to 450 degrees.
Bake for 40 min.
If you like a crustier top remove cover for last 5 min of baking.

Nice crusty warm bread for breakfast and dinner!

*bump up the fiber.  Replace 1 cup of flour with 1/2 cup of wheat brean + 1/2 cup of blender rolled oats (place 1/2 cup of rolled oats into a blender and blend to powder)
OR Replace 3/4 cup of the flour with 1/2 cup bran, 1/4 cup psyllium powder.

Options for cinnamon/raisin bread.
Roll out the dough is a large rectangle.
Spread with soft vegan butter, about 3 Ts.
Mix 1/4 cup of brown sugar with 2 teaspoons of cinnamon
and sprinkle this mixture evenly on the rectangle.
Next, sprinkle raisins, optional, on top of the brown sugar mixture and roll the dough up beginning at the smallest edge.
Bake in the same way as listed above.
